- 1 lb ground beef
- 1 onion, chopped
- 2 carrots, sliced
- 2 potatoes, diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef broth
- 1 cup frozen peas
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- In a large pot, brown the ground beef over medium heat.
- Add the chopped onion and garlic, cooking until the onion is translucent.
- Stir in the carrots, potatoes, and cook for a few minutes.
- Add the diced tomatoes, beef broth, peas, salt, pepper, thyme, and bay leaf.
- Bring to a boil, then reduce heat and let simmer for 30-40 minutes until vegetables are tender.
- Remove the bay leaf before serving.
