Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth
  • 1 cup frozen peas
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the chopped onion and garlic, cooking until the onion is translucent.
  3. Stir in the carrots, potatoes, and cook for a few minutes.
  4. Add the diced tomatoes, beef broth, peas, salt, pepper, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and let simmer for 30-40 minutes until vegetables are tender.
  6. Remove the bay leaf before serving.
