A rich and creamy Puerto Rican drink made with almonds, coconut, and spices, perfect for festive occasions.
Ingredients

- 1 cup almonds
- 1 can (14 oz) coconut milk
- 1 can (12 oz) evaporated milk
- 1 can (sweetened condensed milk)
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1 cup white rum (optional)
Instructions
- Soak the almonds in water overnight.
- Drain and blend the almonds with coconut milk until smooth.
- Strain the mixture through a fine sieve or cheesecloth to remove almond pulp.
- In a large bowl, combine the almond milk, evaporated milk, sweetened condensed milk, vanilla extract, cinnamon, nutmeg, and rum (if using).
- Mix well until all ingredients are combined.
- Chill in the refrigerator for at least 2 hours before serving.
- Serve cold, garnished with a sprinkle of cinnamon if desired.
Notes
- Adjust the sweetness by adding more or less sweetened condensed milk.
- For a non-alcoholic version, omit the rum.
- Coquito can be stored in the refrigerator for up to a week.
