Description

Deliciously moist pumpkin bread topped with creamy frosting, perfect for fall.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 cup canned pumpkin puree
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, and vegetable oil until combined.
  4. Add pumpkin puree, eggs, and vanilla extract to the sugar mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. For the frosting, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Once the bread is completely cool, spread the cream cheese frosting on top.

Notes

  • Store leftovers in an airtight container in the refrigerator.
  • Can be frozen for up to 3 months without frosting.
  • For a spiced version, add 1/4 teaspoon of ground ginger.
