Description

A delicious copycat recipe for the famous Starbucks Pumpkin Loaf, perfect for fall and pumpkin spice lovers.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • 1 cup granulated sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  3. In another bowl, mix the sugar, oil, and eggs until well combined.
  4. Add the pumpkin puree and vanilla extract to the wet ingredients and mix well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. If using, fold in the chopped nuts.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the loaf cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
