Description

Pumpkin Protein Muffins are a healthy and delicious treat packed with protein and the warm flavors of pumpkin spice.


Ingredients

  • 1 cup pumpkin puree
  • 1/2 cup protein powder
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 1/4 cup almond milk
  • 2 eggs
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pumpkin puree, protein powder, oats, honey or maple syrup, almond milk, and eggs until well combined.
  3. Add the baking powder, cinnamon, nutmeg, and salt to the mixture and stir until just combined.
  4. Line a muffin tin with paper liners and pour the batter evenly into each cup.
  5. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  6. Let the muffins cool for a few minutes before transferring them to a wire rack to cool completely.
