Pumpkin Protein Muffins are a healthy and delicious treat packed with protein and the warm flavors of pumpkin spice.

- 1 cup pumpkin puree
- 1/2 cup protein powder
- 1/2 cup oats
- 1/4 cup honey or maple syrup
- 1/4 cup almond milk
- 2 eggs
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the pumpkin puree, protein powder, oats, honey or maple syrup, almond milk, and eggs until well combined.
- Add the baking powder, cinnamon, nutmeg, and salt to the mixture and stir until just combined.
- Line a muffin tin with paper liners and pour the batter evenly into each cup.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
- Let the muffins cool for a few minutes before transferring them to a wire rack to cool completely.
Notes
- These muffins can be stored in an airtight container for up to a week.
- Feel free to add nuts or chocolate chips for extra flavor.
- For a vegan version, substitute eggs with flax eggs.
