Description

A colorful and nutritious vegetarian pasta salad that is perfect for any occasion.


Ingredients

  • 8 oz pasta (any shape)
  • 1 cup cherry tomatoes, halved
  • 1 cup bell peppers, diced (red, yellow, green)
  • 1 cup cucumber, diced
  • 1 cup corn (canned or frozen)
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, bell peppers, cucumber, corn, red onion, and parsley.
  3. Add the cooled pasta to the vegetable mixture.
  4. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the pasta salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
