- 1 bag tortilla chips
- 1 cup black beans, rinsed and drained
- 1 cup corn, frozen or fresh
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/4 cup sliced jalapeños (optional)
- Fresh cilantro, for garnish
- 1 lime, cut into wedges
Instructions
- Preheat the oven to 400°F (200°C).
- Spread the tortilla chips evenly on a large sheet pan.
- Top the chips with black beans, corn, bell peppers, and cherry tomatoes.
- Sprinkle the shredded cheese over the top.
- If desired, add sliced jalapeños for extra heat.
- Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and top with diced avocado and fresh cilantro.
- Serve with lime wedges on the side.
