Description

A colorful and delicious vegetarian twist on traditional nachos, featuring a variety of fresh vegetables and melted cheese, all baked to perfection on a sheet pan.


Ingredients

  • 1 bag tortilla chips
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup sliced jalapeños (optional)
  • Fresh cilantro, for garnish
  • 1 lime, cut into wedges

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Spread the tortilla chips evenly on a large sheet pan.
  3. Top the chips with black beans, corn, bell peppers, and cherry tomatoes.
  4. Sprinkle the shredded cheese over the top.
  5. If desired, add sliced jalapeños for extra heat.
  6. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  7. Remove from the oven and top with diced avocado and fresh cilantro.
  8. Serve with lime wedges on the side.
