Instructions
- In a bowl, combine chia seeds, almond milk, maple syrup, and vanilla extract. Stir well and let it sit for 10 minutes.
- After 10 minutes, stir the mixture again to prevent clumping and refrigerate for at least 2 hours or overnight.
- In a separate bowl, mix fresh raspberries, lemon juice, and lemon zest.
- Once the chia pudding has thickened, layer it in a glass with the raspberry mixture.
- Top with granola if desired and serve chilled.

- For a sweeter pudding, adjust the amount of maple syrup or honey.
