Description

Delicious raspberry swirl cheesecake bars that are creamy, tangy, and perfect for any occasion.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries
  • ¼ cup raspberry jam

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined.
  3. Press the mixture into the bottom of a greased 9×9 inch baking pan.
  4. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  5. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  6. Pour the cream cheese mixture over the crust in the baking pan.
  7. In a small bowl, combine raspberries and raspberry jam, then swirl into the cheesecake mixture.
  8. Bake for 30-35 minutes or until the center is set.
  9. Allow to cool, then refrigerate for at least 4 hours before cutting into bars.
