Description

A classic Creole dish made with red beans, rice, and a blend of spices, perfect for a hearty meal.


Ingredients

  • 1 cup red beans
  • 4 cups water
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 bay leaf
  • 1 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 cups cooked rice

Instructions

  1. Soak the red beans overnight in water.
  2. Drain and rinse the beans, then place them in a pot with 4 cups of water.
  3. Add the chopped onion, bell pepper, celery, garlic, thyme, oregano, bay leaf, cayenne pepper, salt, and pepper.
  4. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours until beans are tender.
  5. Remove the bay leaf and serve the beans over cooked rice.

Notes

  • For added flavor, you can include smoked sausage or ham hock.
  • This dish is best when made a day in advance to allow the flavors to meld.
