- 1 cup red beans
- 4 cups water
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 bay leaf
- 1 teaspoon cayenne pepper
- Salt and pepper to taste
- 2 cups cooked rice
Instructions
- Soak the red beans overnight in water.
- Drain and rinse the beans, then place them in a pot with 4 cups of water.
- Add the chopped onion, bell pepper, celery, garlic, thyme, oregano, bay leaf, cayenne pepper, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours until beans are tender.
- Remove the bay leaf and serve the beans over cooked rice.
Notes
- For added flavor, you can include smoked sausage or ham hock.
- This dish is best when made a day in advance to allow the flavors to meld.
