Ingredients

- 1 cup of segmented Irish clementines
- 1/4 cup of red onion, thinly sliced
- 1/4 cup of fresh mint leaves, chopped
- 2 tablespoons of olive oil

Instructions
- In a large bowl, combine the sliced cucumbers, segmented clementines, and red onion.
- Add the chopped mint leaves to the bowl.
- In a small bowl, whisk together the olive oil, apple cider vinegar, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
