Ingredients

- 1 thick-cut steak (ribeye or sirloin)
- Salt and pepper to taste
- 2 tablespoons olive oil
- 4 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
Instructions
- Preheat your oven to 275°F (135°C).
- Season the steak generously with salt and pepper.
- Place the steak on a wire rack over a baking sheet and cook in the oven until it reaches an internal temperature of 125°F (52°C) for medium-rare.
- Remove the steak from the oven and let it rest for 10 minutes.
- In a skillet, heat olive oil over high heat.
- Once hot, sear the steak for 1-2 minutes on each side until a crust forms.
- In the last minute of cooking, add butter, garlic, rosemary, and thyme to the skillet, basting the steak with the melted herb butter.
- Remove from heat and let the steak rest for another 5 minutes before slicing.

- For best results, use a meat thermometer to check the internal temperature.
- Let the steak rest after cooking to retain juices.
