- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup BBQ sauce
- 1 lb mixed vegetables (e.g., bell peppers, zucchini, and red onion)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Form the mixture into meatballs, about 1 inch in diameter.
- Place the meatballs on a sheet pan lined with parchment paper.
- In a separate bowl, toss the mixed vegetables with a little olive oil, salt, and pepper, then spread them around the meatballs on the sheet pan.
- Brush the meatballs with BBQ sauce.
- Bake in the preheated oven for 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.
- Serve hot with additional BBQ sauce if desired.
