Ingredients

  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup BBQ sauce
  • 1 lb mixed vegetables (e.g., bell peppers, zucchini, and red onion)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  3. Form the mixture into meatballs, about 1 inch in diameter.
  4. Place the meatballs on a sheet pan lined with parchment paper.
