Description

A delicious and easy-to-make vegetarian dish featuring crispy tortilla chips topped with eggs, beans, cheese, and fresh toppings, all baked on a single sheet pan.


Ingredients

  • 8 corn tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 large eggs
  • 1 cup salsa
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Arrange the corn tortillas on a large sheet pan, overlapping slightly.
  3. Spread the black beans evenly over the tortillas.
  4. Sprinkle the shredded cheese on top of the beans.
  5. Make four small wells in the cheese and crack an egg into each well.
  6. Season the eggs with salt, pepper, and cumin.
  7. Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
  8. Remove from the oven and top with salsa, diced avocado, and chopped cilantro.
  9. Serve immediately and enjoy!
