- 8 corn tortillas
- 1 can black beans, drained and rinsed
- 1 cup shredded cheese (cheddar or Mexican blend)
- 4 large eggs
- 1 cup salsa
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Arrange the corn tortillas on a large sheet pan, overlapping slightly.
- Spread the black beans evenly over the tortillas.
- Sprinkle the shredded cheese on top of the beans.
- Make four small wells in the cheese and crack an egg into each well.
- Season the eggs with salt, pepper, and cumin.
- Bake in the preheated oven for 15-20 minutes, or until the eggs are set to your liking.
- Remove from the oven and top with salsa, diced avocado, and chopped cilantro.
- Serve immediately and enjoy!
