Description

A delicious and creamy skillet queso made with chorizo and roasted poblanos, perfect for dipping.


Ingredients

  • 1 lb chorizo
  • 2 roasted poblano peppers, diced
  • 2 cups shredded cheese (cheddar and Monterey Jack)
  • 1 cup cream cheese
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook the chorizo over medium heat until browned.
  2. Add the diced roasted poblanos and cook for an additional 2 minutes.
  3. Reduce the heat to low and stir in the cream cheese until melted.
  4. Add the shredded cheese and stir until fully melted and combined.
  5. Mix in the diced tomatoes, garlic powder, onion powder, salt, and pepper.
  6. Garnish with chopped cilantro before serving.
