Ingredients

  • 1 tsp smoked paprika

  • 12 chipotle peppers in adobo sauce
  • 2 cups beef broth
  • Taco shells
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a slow cooker, combine lime juice, apple cider vinegar, onion, garlic, cumin, oregano, chili powder, smoked paprika, black pepper, salt, and chipotle peppers.
  2. Add the beef chuck roast to the slow cooker, ensuring it is well coated with the spice mixture.
  3. Pour the beef broth over the meat.
  4. Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
  5. Once cooked, shred the beef with two forks and mix it with the juices in the slow cooker.
  6. Serve the barbacoa in taco shells, garnished with fresh cilantro and lime wedges.
