- 1/4 cup lime juice
- 1/4 cup apple cider vinegar
- 1 onion, chopped

- 2 tsp dried oregano
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1–2 chipotle peppers in adobo sauce
- 2 cups beef broth
- Taco shells
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a slow cooker, combine lime juice, apple cider vinegar, onion, garlic, cumin, oregano, chili powder, smoked paprika, black pepper, salt, and chipotle peppers.
- Add the beef chuck roast to the slow cooker, ensuring it is well coated with the spice mixture.
- Pour the beef broth over the meat.
- Cover and cook on low for 8 hours or until the beef is tender and easily shredded.
- Once cooked, shred the beef with two forks and mix it with the juices in the slow cooker.
- Serve the barbacoa in taco shells, garnished with fresh cilantro and lime wedges.

- For extra flavor, marinate the beef overnight in the spice mixture.
- Adjust the number of chipotle peppers based on your spice preference.
