Slow Cooker Cowboy Casserole is a hearty and comforting dish that combines ground beef, beans, corn, and cheese, all cooked together in a slow cooker for a delicious family meal.

- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup diced onion
- 1 cup diced bell pepper
- Salt and pepper to taste
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Add the cooked beef to the slow cooker.
- Stir in the black beans, kidney beans, corn, diced tomatoes, taco seasoning, onion, and bell pepper.
- Mix well and season with salt and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, sprinkle the shredded cheddar cheese on top and cover until melted.
- Serve hot and enjoy!
