Ingredients

  • 1 lb ground beef
  • 4 cups beef broth
  • 2 cups potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 bay leaf

Instructions

  1. In a skillet, brown the ground beef over medium heat and drain excess fat.
  2. Transfer the browned beef to the slow cooker.
  3. Add the beef broth, potatoes, carrots, celery, onion, garlic, diced tomatoes, thyme, salt, pepper, and bay leaf to the slow cooker.
  4. Stir to combine all ingredients.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Remove the bay leaf before serving.
