- 1 lb ground beef
- 4 cups beef broth
- 2 cups potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes (14.5 oz)
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
Instructions
- In a skillet, brown the ground beef over medium heat and drain excess fat.
- Transfer the browned beef to the slow cooker.
- Add the beef broth, potatoes, carrots, celery, onion, garlic, diced tomatoes, thyme, salt, pepper, and bay leaf to the slow cooker.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Remove the bay leaf before serving.

- Feel free to add any other vegetables you have on hand.
- This stew can be frozen for later use.
