- 1 lb boneless, skinless chicken breasts
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- 4 cups chicken broth
- Salt and pepper to taste
- 1 cup corn (frozen or canned)
- 1/2 cup sour cream (optional)
- Chopped cilantro for garnish (optional)
Instructions
- Place the chicken breasts at the bottom of the slow cooker.
- Add the white beans, diced green chilies, chopped onion, minced garlic, cumin, chili powder, and chicken broth.
- Season with salt and pepper to taste.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- About 30 minutes before serving, shred the chicken in the slow cooker and stir in the corn.
- Serve hot, topped with sour cream and cilantro if desired.
Notes
- For a spicier chili, add jalapeños or cayenne pepper.
- This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
