Description

A hearty and flavorful dish of collard greens slow-simmered with smoked turkey, perfect for a comforting meal.


Ingredients

  • 2 lbs collard greens, cleaned and chopped
  • 1 lb smoked turkey leg or wing
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp red pepper flakes (optional)
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the smoked turkey and cook for a few minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Add the collard greens and red pepper flakes, if using.
  5. Reduce heat to low, cover, and let simmer for 1.5 to 2 hours until greens are tender.
  6. Season with salt and pepper to taste before serving.

Notes

  • For a vegetarian version, substitute smoked turkey with a smoked vegetable broth.
  • Collard greens can be substituted with kale or mustard greens if desired.
