- 2 lbs collard greens, cleaned and chopped
- 1 lb smoked turkey leg or wing
- 1 onion, chopped
- 4 cloves garlic, minced
- 4 cups chicken broth
- 1 tsp red pepper flakes (optional)
- Salt and pepper to taste
Instructions
- In a large pot, sauté the chopped onion and minced garlic until translucent.
- Add the smoked turkey and cook for a few minutes.
- Pour in the chicken broth and bring to a boil.
- Add the collard greens and red pepper flakes, if using.
- Reduce heat to low, cover, and let simmer for 1.5 to 2 hours until greens are tender.
- Season with salt and pepper to taste before serving.
Notes
- For a vegetarian version, substitute smoked turkey with a smoked vegetable broth.
- Collard greens can be substituted with kale or mustard greens if desired.
- Leftovers can be stored in the refrigerator for up to 3 days.
