Ingredients

- 500g all-purpose flour
- 350ml water
- 100g sourdough starter
- 10g salt
- 30ml olive oil
- Fresh herbs (rosemary, thyme, etc.)
- Coarse sea salt for topping
Instructions
- In a large bowl, mix the flour and water until combined.
- Add the sourdough starter and salt, and mix until a dough forms.
- Let the dough rest for 30 minutes, then stretch and fold it in the bowl.
- Repeat the stretch and fold process every 30 minutes for 2-3 hours.
- Transfer the dough to a greased baking pan and let it rise for 4-6 hours or until doubled in size.
- Preheat the oven to 220°C (428°F).
- Drizzle olive oil over the dough and use your fingers to create dimples.
- Sprinkle fresh herbs and coarse sea salt on top.
- Bake for 20-25 minutes or until golden brown.
- Let it cool before slicing and serving.
Notes
- For best results, use a mature sourdough starter.
- Experiment with different toppings like olives or sun-dried tomatoes.
- This bread can be stored in an airtight container for up to 3 days.
