- 3 cups all-purpose flour
- 1 cup sourdough starter (active and bubbly)
- 1 cup water
- 2 teaspoons salt
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary (optional)
- Coarse sea salt for topping
Instructions
- In a large bowl, mix the flour, sourdough starter, water, and salt until combined.
- Let the dough rest for 30 minutes to 1 hour for autolyse.
- Add olive oil and knead the dough for about 5-10 minutes until smooth.
- Place the dough in a greased bowl, cover, and let it rise for 4-6 hours or until doubled in size.
- Preheat the oven to 425°F (220°C).
- Transfer the dough to a greased baking sheet and stretch it out gently to fit the pan.
- Use your fingers to create dimples in the dough, then drizzle with olive oil and sprinkle with coarse sea salt and rosemary.
- Bake for 20-25 minutes or until golden brown.
- Let it cool slightly before slicing and serving.

- Feel free to add toppings like olives, cherry tomatoes, or garlic for extra flavor.
- This focaccia can be stored in an airtight container for up to 3 days.
