Ingredients

- 500g bread flour
- 350g water
- 100g active sourdough starter
- 10g salt
- Olive oil for drizzling
- Optional toppings (herbs, olives, tomatoes, etc.)
Instructions
- In a large bowl, mix the bread flour, water, and sourdough starter until combined.
- Add the salt and mix until fully incorporated.
- Cover the bowl and let it rest for 30 minutes.
- Perform stretch and folds every 30 minutes for 2-3 hours.
- Transfer the dough to a well-oiled baking pan and spread it out gently.
- Cover and let it rise for 4-6 hours at room temperature or overnight in the fridge.
- Preheat the oven to 220°C (428°F).
- Before baking, dimple the surface of the dough and drizzle with olive oil and toppings.
- Bake for 20-25 minutes or until golden brown.
- Let it cool slightly before slicing and serving.
Notes
- For a more intense flavor, allow the dough to rise overnight in the fridge.
- Experiment with different toppings to customize your focaccia.
- Store leftovers in an airtight container at room temperature for up to 2 days.
