Ingredients

  • 8 large eggs
  • 1 cup asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup milk
  • 1/4 cup onion, finely chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat and sauté the onion until translucent.
  3. Add the asparagus and cook for about 3-4 minutes until tender.
  4. In a bowl, whisk together the eggs, milk, salt, and pepper.
  5. Pour the egg mixture over the asparagus and onion in the skillet.
  6. Sprinkle the crumbled goat cheese on top.
  7. Cook on the stovetop for 2-3 minutes until the edges start to set.
  8. Transfer the skillet to the preheated oven and bake for 15-20 minutes until the frittata is set and lightly golden.
  9. Let it cool for a few minutes before slicing and serving.
