- 4 large eggs
- 4 large flour tortillas
- 1 cup shredded cheese
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat the grill to medium-high heat.
- Season the steak with salt and pepper, then grill for about 5-7 minutes on each side or until desired doneness.
- Remove the steak from the grill and let it rest for a few minutes before slicing it thinly.
- In a skillet, heat a little olive oil over medium heat and sauté the diced bell peppers and onions until soft.
- In a bowl, whisk the eggs and pour them into the skillet, scrambling until fully cooked.
- Warm the tortillas on the grill for about 30 seconds on each side.
- Assemble the burritos by placing steak, scrambled eggs, sautéed vegetables, and cheese in the center of each tortilla.
- Roll up the tortillas tightly and serve immediately.
