- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 3/4 cup dried figs, chopped
- 1/2 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
- 1 tablespoon coarse sugar for topping
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt.
- Add the cold, cubed butter to the flour mixture and use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Stir in the chopped figs.
- In a separate bowl, whisk together the heavy cream, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Turn the dough out onto a floured surface and gently knead it a few times until it comes together.
- Pat the dough into a circle about 1 inch thick and cut into wedges.
- Place the scones on the prepared baking sheet and sprinkle with coarse sugar.
- Bake for 15-20 minutes or until golden brown.
Notes
- For a richer flavor, you can add a pinch of cinnamon to the dry ingredients.
- These scones are best served warm with butter.
- Store any leftovers in an airtight container at room temperature for up to 2 days.
