Description

Tuscan White Bean Soup is a hearty dish that combines the flavors of white beans, vegetables, and herbs for a comforting meal.


Ingredients

  • 2 cups white beans, cooked
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic and cook for another minute.
  4. Add the cooked white beans, diced tomatoes, vegetable broth, thyme, and rosemary.
