- Rice paper wrappers
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup bell peppers, sliced
- 1 cup lettuce, shredded
- 1/2 cup fresh mint leaves
- 1/2 cup fresh cilantro leaves
- 1/4 cup peanut butter
- 2 tablespoons soy sauce
- 1 tablespoon lime juice
- 1 tablespoon maple syrup
- 1 teaspoon garlic, minced
- Water for soaking rice paper
Instructions
- Prepare all the vegetables by washing and cutting them into thin strips.
- In a bowl, mix together the peanut butter, soy sauce, lime juice, maple syrup, and minced garlic to create the peanut sauce.
- Fill a shallow dish with warm water and soak one rice paper wrapper for about 10-15 seconds until soft.
- Place the soaked rice paper on a clean surface and layer a small amount of each vegetable and herbs in the center.
- Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top.
- Repeat the process with the remaining rice paper wrappers and filling.
- Serve the spring rolls with the peanut sauce for dipping.
