Description

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or fresh
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes or until liquid is absorbed.
  3. In a large bowl, combine cooked quinoa, black beans, corn, red bell pepper, cumin, chili powder, salt, and pepper.
  4. Toss gently to combine all ingredients.
  5. Serve topped with diced avocado and fresh cilantro.
