Veggie Rainbow Pinwheels are a colorful and healthy snack option that kids will love. These vegan pinwheels are made with fresh vegetables and a delicious spread, all wrapped in a tortilla for a fun and nutritious treat.


Ingredients

  • 4 large whole wheat tortillas
  • 1 cup hummus
  • 1 cup shredded carrots
  • 1 cup spinach leaves
  • 1 cup bell peppers (various colors), sliced
  • 1 cup cucumber, thinly sliced
  • 1 cup purple cabbage, shredded

Instructions
