Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the pumpkin, tomatoes, onion, and garlic with olive oil, salt, pepper, basil, and paprika.
- Spread the mixture on a baking sheet and roast for 25-30 minutes until tender.
- Transfer the roasted vegetables to a pot and add the vegetable broth.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Use an immersion blender to puree the soup until smooth.
- Serve hot, garnished with fresh herbs if desired.
