- 2 cups watermelon, cubed
- 1 jalapeño, seeded and minced
- 1/4 cup lime juice
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh cilantro, chopped
Instructions
- In a blender, combine watermelon, jalapeño, lime juice, olive oil, salt, and pepper. Blend until smooth.
- Marinate the chicken breasts in the watermelon mixture for at least 1 hour, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove chicken from marinade and grill for 6-7 minutes on each side or until fully cooked.
- Garnish with fresh cilantro before serving.
