Description

Ingredients

  • 8 oz feta cheese
  • 1/2 cup cream cheese
  • 1/4 cup olive oil
  • 1 tsp lemon juice
  • 1 pint cherry tomatoes
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a baking dish, combine cherry tomatoes, olive oil, oregano, salt, and pepper. Toss to coat.
  3. Roast the tomatoes in the oven for 20-25 minutes until they are blistered and caramelized.
  4. In a food processor, combine feta cheese, cream cheese, lemon juice, and a pinch of salt. Blend until smooth and creamy.
  5. Once the tomatoes are done roasting, let them cool slightly.
  6. Spread the whipped feta on a serving platter and top with the roasted cherry tomatoes.
