- 8 oz feta cheese
- 1/2 cup cream cheese
- 1/4 cup olive oil
- 1 tsp lemon juice
- 1 pint cherry tomatoes
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a baking dish, combine cherry tomatoes, olive oil, oregano, salt, and pepper. Toss to coat.
- Roast the tomatoes in the oven for 20-25 minutes until they are blistered and caramelized.
- In a food processor, combine feta cheese, cream cheese, lemon juice, and a pinch of salt. Blend until smooth and creamy.
- Once the tomatoes are done roasting, let them cool slightly.
- Spread the whipped feta on a serving platter and top with the roasted cherry tomatoes.
- Drizzle with additional olive oil if desired and serve with crackers or bread.
Notes
- For a spicier kick, add red pepper flakes to the tomatoes before roasting.
- This dish can be made ahead of time; just store the whipped feta and tomatoes separately until ready to serve.
