Description

Crispy zucchini fritters served with a flavorful garlic yogurt dip, perfect for a summer snack.

Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 cup chopped fresh parsley
  • Oil for frying
  • 1 cup plain yogurt
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt to taste

Instructions

  1. Grate the zucchinis and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  2. After 10 minutes, squeeze out excess moisture from the zucchinis using a clean kitchen towel.
  3. In a bowl, combine the grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and parsley. Mix well.
  4. Heat oil in a frying pan over medium heat.
  5. Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly. Fry until golden brown on both sides.
  6. Remove fritters and place them on paper towels to drain excess oil.
  7. For the garlic yogurt dip, mix yogurt, minced garlic, lemon juice, and salt in a bowl.
  8. Serve the zucchini fritters warm with the garlic yogurt dip on the side.

  • For a gluten-free version, substitute all-purpose flour with almond flour or a gluten-free flour blend.
