Ingredients

  • 4 medium zucchinis
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup broccoli florets
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Spiralize the zucchinis using a spiralizer and set aside.
  2. In a large skillet, heat olive oil over medium heat.
  3. Add minced garlic and sauté for 1 minute until fragrant.
  4. Add sliced bell peppers and broccoli florets, cooking for about 5 minutes until tender.

  6. Add the spiralized zucchini to the skillet and toss everything together, cooking for another 2-3 minutes until the zucchini is slightly softened.
  7. Season with salt and pepper to taste.
