- 4 medium zucchinis
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped
- 1 teaspoon garlic powder
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and slice the zucchinis into rounds.
- In a large bowl, toss the zucchini slices with olive oil, salt, pepper, garlic powder, and half of the Parmesan cheese.
- Spread the zucchini on a baking sheet in a single layer.
- Bake for 20 minutes, flipping halfway through.
- Remove from the oven and sprinkle with the remaining Parmesan cheese and fresh basil.
- Serve warm and enjoy!

- For a vegan option, substitute Parmesan cheese with nutritional yeast.
